Abstract

The effect of different condiments on the
growth of Aspergillus niger in mango pickle
has been investigated. Most of the spices,
except cinnamon and cloves, had little or no
inhibitory effect on this mould. Common
salt, although not effective itself, supplements
the preservative offect of cinnamon and
cloves.
