Abstract
Properties and applications of chitin and chitosan are reviewed. Aspects considered include: the wide abundance of chitin as a natural biopolymer; chemistry/molecular structure of chitin and chitosan; industrial manufacture of chitin and chitosan from crustacean shells; chitosan as a major component of fungal cell walls; molecular association of chitin and chitosan with proteins, carotenoids and glucans; physicochemical properties of chitin, chitosan and their derivatives; applications of chitin and chitosan in the agricultural and pharmaceutical fields; use of chitosan in water purification; food applications of chitin and chitosan (antimicrobial activity in foods, use in food packaging films, control of enzymic browning in fruits, clarification and deacidification of fruit juices, antioxidative activity); nutritional effects of chitin and chitosan; physiological properties of chitooligomers; and manufacture of chitooligomers.
