Abstract

The flow behaviour of mango pulp and mango concentrate were studied using a coaxial narrow gap viscometer, at temp. of 25-62 degree C and concn. of 11-26 degree Brix, using a power law model for shear stress and shear rate. Consistency index and flow behaviour index were calculated to be K = 0.012 exp (-1.91 x 10-3/T) and 0.31, resp. Activation energy was 3.82 kcal/g mol.; K was related to concn. by K = 1.4 C-1-.-5.
