Abstract

Physico-chemical characteristics and fatty acid composition of groundnut oil stored in amber-coloured bottles for 18 months at room temp. were determined at monthly intervals. The iodine value dropped from 95 to 92, and saponification value dropped from 194.7 to 189.7. BR readings and Bellier value remained constant. Linoleic acid content decreased from 33 to 31%.
