Abstract

Effect of time interval between harvesting and low temp. storage on bananas of varying maturities, rate of cooling of bananas in shipholds and its effect on quality, effect of sub-optimal temp. on incidence of chilling in bananas, and ripening studies on cold stored bananas were investigated. It was found that green banana hands, pulp to peel ratio 1 to 1.2 stored in cartons for 30, 48-60 and 72 h after harvest, were green and fresh for 27, 26 and 25 days respectively at 55 degree F and 85% RH. Those with a ratio greater than 1.2 could not be stored green greater than 20 days. full bananas loaded into shiphold within 60 h of harvesting and cooled to 60 degree F within 12 h gave a better quality product. Ships with vertical cold air flow cooled bananas quicker than horizontal systems. full green bananas developed chilling injury in 3, 22, 36 and 48-60 h, 7 days and 23 days when exposed to 23-32 degree F, 33 degree F, 37 degree F, 42 degree F, 48 degree F and 54 degree F respectively. Bananas (pulp to peel ratio 1.10-1.50) cold stored for 21 days and ripened within 10 days at 69-70 degree F, were acceptable in colour, taste and flavour after smoking. Blemishes increased with increasing maturity at harvest.
