Abstract
Esterifications catalysed by lipase from Candida rugosa were performed in non-polar solvent using carbohydrates and unactivated/unprotected L-amino acids as substrates. The various products of the reaction were identified and their relative concn. were determined. Reaction yields were between 7 and 79% and both mono- and di-L-amino acyl esters of the carbohydrates were formed. 67 of the 80 reaction products were novel esters.
