Additional Information: |
It has been observed that the normal beet and hairy root extracts were known to contain an important secondary metabolite, betalain, which is gaining a lot of importance as food colourant. Apart from betalain, they also contain appreciable concentrations of peroxidase enzyme, especially hairy roots (6and7) of hairy root POD. Since the present study also aims at simultaneous recovery of pigment and POD from hairy root cultures of red beet to economize the production process for both the products which may be applicable for normal beet, the normal beet extract has been used for comparative analysis throughout the study.
|
