Abstract

Focusses on the interaction of ligands with 11S protein fraction and addresses the very vital issue of destabilization of protein structure in presence of ligands and such destabilization has also the contribution of water structure to the molten globule structure of the 11S protein fraction. Studies are carried out of the (i)interaction of CGA, CA and QA with 1IS and 2S protein fractions and (ii) interaction of guanidinium class denaturants with 11S protein fraction (iii) effect of temperature on structural stability of 11S protein fraction in presence of different ligands such as hydrogen ion, sodium chloride, polyphenols, guanidinium salts and cosolvents and (iv)interaction of cosolvents with 11S protein fraction.
