Additional Information: | Application of acoustic waves in the drying of food products is an emerging technology. In this present study, ultrasoicaton effect was studied on the pretreatment in osmotic solutions of various concentrations as well as in distilled water and also during the final drying. Acoustic pretreated samples in osmotic solutions gave 33% reduction in drying time, and better rehydration capacity 17% more compared to pure hot air drying. In the case of microwave-convective drying ultrasonication does not any effect on drying, however sonication aided in improving the rehydration capacity (34%more) compared to pure microwave-convective drying. |
