Abstract
Storage proteins in oilseeds have always been considered simply as a nitrogen reserve, a view that is now changing. Most oilseeds contain two major protein fractions, namely, the high molecular weight (HMW) or the 11S protein fraction and the low molecular weight (LMW) or the 2S protein fraction. Several workers have isolated and characterised these proteins in solution. The critical analyses set out in this paper reveal that there exists a structural similarity among HMW proteins from different seeds and also amongst LMW proteins from different seeds, in such properties as aminoacid composition, secondary structure, molecular weight, subunit composition, intrinsic viscosity, fluorescence, carbohydrate content, enzymatic hydrolysis, association-dissociation, dissociation- denaturation and reassociation at extremely acidic pH. The hypothesis of structural similarity of proteins in oilseeds also raises the possibility of a common ancestral gene.
