Abstract

Studies on the chemical analysis and preservation of avocado pulp are reported. Freeze-drying of avocado pulp at 40-50°C. followed by sieving has been found to give a fine powder having good keeping. qualities below 32 per cent relative humidity, at a storage temperature of 37°C. The powder stored under these conditions retains its attractive yellow colour and free-flowing characteristics, and reconstitutes well with cold water.
