Abstract

The effect of walnut kernel and its oil on reduction of serum lipids (cholesterol, triglycerides, phospholipids, total lipids), was studied in cholesterol bile salt-stressed hypercholesterolaemic rats. Tabulated data showed that replacing vanaspati (partially hydrogenated vegetable oil) by walnut kernels, refined or unrefined walnut kernel oil significantly lowered serum lipids (more effectively than refined safflower oil). This effect was not dependent on unsaponifiable matter or sterol contents of the oil. A 50:50 blend of vanaspati with unrefined walnut oil was as effective as pure walnut kernel or oil.
