Abstract
Effects of acid ensiling upon the stability of various classes of proteinases present in the visceral wastes of rohu (Labeo rohita) were investigated. Changes in moisture, fat and ash contents were not significant (P greater than or equal to 0.05) during 4 wk of storage at ambient temp. (27 plus or minus 2 C). Fresh visceral waste had considerable proteinase activity and buffer extractable proteins (2.7% w/w). There was a significant reduction in buffer extractable proteins (BEP) immediately after acidification (P less than or equal to 0.05), which later increased in the 1st 2 wk, before decreasing further during storage. Marked decreases (P less than or equal to 0.05) in the specific activities (U/mg protein) of acidic, neutral and alkaline proteinases were observed during storage. The stability of the proteinases was negatively affected by acid ensiling, even with the use of weak acids like propionic and formic acid.
