Abstract
Ethanol-extractable sugars and non-starchy polysaccharides of finger millet, pearl millet, foxtail millet and their malts were isolated and characterized. Tabulated data showed that malted samples contained significantly higher levels of free sugars (glucose, fructose and maltose) and water-soluble non-starchy polysaccharides (WSNSP) than native millets. The WSNSP isolated from malted samples were richer in hexoses than pentoses. Yields as well as the qualitative and quantitative sugar profiles of the hemicellulosic polysaccharides, showed little variation between native and malted millets.
