Abstract
A method for removal of outer bran and for producing semolina and flour with negligible bran content has been studied using a plate grinder (used for small scale production of whole-grain flours throughout India) to which is fitted a 4-deck sifter unit with 16, 24, 30 and 60 mesh sieves, and an aspirator, both deriving power from one motor. Maize (Zea mays), sorghum (Sorghum vulgare), bajra (Pennisetum typhoideum), ragi (Eleusine coracana) and wheat (Triticum aestivum) were moistened by 1-3% water, ground coarsely in the plate grinder and sieved. The bran yield ranged from 8.1 to 12.4%, coarse semolina from 14.4 to 24.2%, fine semolina from 26.5 to 33% and flour from 34.7 to 62%. The total yield of edible fractions varied from 87.6 to 91.9%. The yield of bran in the non-conditioned grains decreased by 2-4%.
