Abstract

Blends of (i) sal (Shorea robusta) fat and groundnut oil 30:70 w/w (Sal-GNO), (ii) vanaspati and groundnut oil (40:60) (VP-GNO), (iii) sal fat and safflower oil (50:50) (Sal-saff) and (iv) cottonseed oil (CS) alone could be modified to give plastic fat with slip point of 33-34 degree C by interesterification using sodium methoxide catalyst. Randomization at 65 degree C for 30 min was found to be sufficient for blends of Sal-GNO. Products involving VP-GNO, Sal-saff and CS required subsequent directed interesterification for 24 h at 25 degree C.
