Abstract

Locally obtained chillies, var. Guntur, were dried at 60 degree C for 2 h before being destalked or ground. Samples of ground or whole chillies were packed into pouches made of paper, low or high density polyethylene, saran/cellophane/polyethylene laminate or Al foil laminate and stored at 27 degree C, 65% RH or 38 degree C, 90% RH, or directly exposed to sunlight for 5-6 h/day for 90 days. Initial moisture content was 5.5%. Samples were also exposed to 27 degree , 38 degree C or direct sunlight for 90 days in air-tight glass bottles, having a range of moisture contents 4.5-11.5% for powder and 6.1-12.5% for whole chilli. Colour in these materials was determined as optical density of a benzene extract at 496 nm. A sorption isotherm was plotted for whole and ground chilli by equilibriation at 27 degree C with RH in the range 11-86%. The isotherms were very similar for both products, sigmoid in shape and showing a steep rise in moisture content at greater than 55% RH; mould growth observed at greater than 75% RH. Higher moisture content and temp. promoted colour loss, as did sunlight, by bleaching the carotenoid pigments. Moisture pick-up through the flexible packages correlated well with vapour transmission rates. Colour loss was greater at higher temp., but reduced in the Al foil and coloured polyethylene packs. Whole chillies at the higher temp. were discoloured due to non-enzymatic browning, but retained their colour at the lower temp. even in kraft paper packs.
