Abstract

Pleurotus eous, a pink-coloured mushroom, was successfully cultivated in deep wooden trays (60 x 90 x 17.5 cm) at 21-35 degree C and 65-90% RH using presoaked paddy straw and coarsely ground horse gram as the growth medium. The harvested mushroom contained 33.24% protein and 15 free amino acids. When cooked it was softer and had a stronger aroma than P. flabellatus; it was more attractive after freeze-drying.
