Abstract

Coorg mandarins of both the main crop (matures in Nov.-Feb.) and the monsoon crop (matures June-Sept.), were analysed and compared to determine any variation in juice quality or chemical constituents of the component parts of the fruit. Data are presented on the moisture content, total pectin, the 3 pectin fractions (viz. water, oxalate and acid soluble pectins), Ca content and pectinesterase activity in the flavedo, albedo, rag, juice sacs residue, seed and juice of both main and monsoon crops. The monsoon crop appeared to have high pectinesterase activity, low Ca content, high water soluble and low acid soluble pectin content compared with the main crop.
