Abstract

Factors and constituents influencing coffee quality are reviewed; effects of harvesting and processing practices and of chemical composition are also discussed. Quality factors of raw and roasted coffee, cup quality characteristics and steps in the preparation of washed coffee which affect quality are presented in tabular form.
