Storage studies of tomato and bell pepper using eco-friendly films.

Abstract
Influence of environment friendly packaging materials (biodegradable chitosan film) on shelf life of bell peppers and tomatoes was studied. Wax-lined cartons of peppers or tomatoes (approx. 0.35 kg/carton) were wrapped in chitosan or polyethylene (LDPE) film and stored at room temp. (27 1C), and 65 3% RH for 16 and 30 days (peppers and tomatoes, respectively). Samples were examined periodically for changes in physicochemical and sensory properties, and data were subjected to principal component analysis. Changes in packaging atmosphere were also determined. Tomatoes and peppers stored in chitosan-film-covered cartons had improved shelf life as demonstrated from lower fresh wt. loss, less shrivelling and spotting and better retention of colour and firmness compared with the polyethylene film treatment. Packaging in polyethylene film also resulted in loss of characteristic bell pepper aroma. O2 levels in cartons showed relatively little change during storage, whereas greatest increases in CO2 levels during storage were noted in LDPE-film covered cartons. Principal component analysis was able to differentiate samples stored under different conditions with regard to desirable and undesirable sensory attributes.
