Abstract

Dhal milling is the 3rd largest food grain processing industry in India after rice and wheat milling. In this study, a process to retrieve the cotyledon material from commercial dhal mill by-products, which contain approx. 50% cotyledon material amounting to 1 million t, was investigated. An attempt to refine the by-product to an acceptable or desired level was also made. The process consisted of destoning, size separation and air classification followed by refining and thermal stabilization of edible material. Approx. 30-35% of the cotyledon material was recovered from the by-products and used to prepare traditional pulse-based products. Cotyledon material could be substituted in pulse-based products such as vada, rasam/sambar and papads by up to approx. 50%. It is suggested that adoption of this technology by dhal millers in India could result in the recovery of approx. 5 t of cotyledon material valued at INR 500.
