Abstract

Drying kinetics and properties of chitosan-based films prepared at different drying temp. (80, 90, 100C) were determined with the following objectives: to adopt suitable methods for wet casting and drying of chitosan-based films; to develop a suitable protocol for IR and oven drying; and to study physical, mechanical, barrier properties and structural changes in comparison to those of films prepared under ambient temp. drying (approx. 27C). Films were prepared by dissolving chitosan (2% w/v, mol. wt. 100 kDa, degree of acylation approx. 20%) in water containing 1% acetic acid by constant stirring followed by filtration through a no. 80 sieve. The solution was degassed by vacuum pumping. IR drying was faster and superior to oven drying in preserving the functional properties of chitosan films, and resulted in films with a tensile strength less than that of films dried at ambient temp. (49.58-53.34 vs. 57.68-59.38 MPa). Elongation of IR dried films was reduced by <1%. Oven dried films had a higher colour index compared to IR or ambient temp. dried films. Although subtle variations in the crystallinity patterns of differently dried films were detected, no marked differences were observed in film properties (burst strength).
