Abstract
The prevalence of Yersinia enterocolitica was studied in the street food panipuri. 8 samples of panipuri, each consisting of the 3 individual items of pani, puri and masala, were collected from different street vendors in the surrounding area of Mysore city, India, and analysed for mesophilic aerobes, coliforms and Yersinia spp. The masala samples showed high levels of contamination, with mesophilic aerobes, coliforms and Yersinia spp. recorded at 6.9, 6.4 and 6.1 log10 cfu/g, respectively. Escherichia coli was present in 3 samples of masala. Identification, based on microscopic characters and key biochemical tests, was conducted on 33 pure cultures isolated from Yersinia selective plates, and 6 cultures were shown to be Y. enterocolitica. Characterization of these 6 isolates for virulence factors indicated 2 isolates to be virulent strains, as they showed positive reactions to autoagglutination and crystal violet binding tests.
