Abstract

Freshly harvested mature green tomatoes were washed, sorted and treatedw ith 125p pm chlorinew ater. The treatedt omatoesw ere stored at 85% or 98% RH under controlled atmosphere( CA) storagef or periodsu p to 8 wk. The controlleda tmospherew as 2.5% 02, 5.0% CO*, and N, as the balance gas at 12°C. After storing 40 days, the tomatoesw ere allowed to ripen in air at 23°C. Sampleso f tomatoes were testede very3 dayst o examinec hangesin quality as determined by visual observation,w eight loss, titratable acidity, pH, color and firmness. Weight loss was reduced significantly by CA storage of tomatoes at 98% RH. Tomatoes remained green up to 40 days of storagea nd changedin color graduallyd uring consecutives toragei n atmosphericc onditions.A ppearanceo f the tomatoesw as acceptable after ripening.
