Abstract

Acid swelling (to increase the surface area for enzymatic degradation) or alkali delignification of the straw substrate did not increase yields of the white oyster mushroom, nor did the addition of extra carbon as glucose or cellulose during fructification. Supplementation of the substrate with organic nitrogen after the spawn run, or supplementation of spent straw prior to its re-use, increased yields and fruit-body protein contents, with cotton seed powder giving the highest yields (610 and 430 g/kg dry straw, respectively) and casein the highest protein contents in both cases. Mushrooms raised from straw beds supplemented with cotton seed powder had a strong flavour and deteriorated quickly at ambient temperature. Prolonging the length of the spawn run by continued disturbance of the beds did not increase yields, and extending the spawn run by 12 or 16 days reduced yields slightly. Of several mineral salt supplements tested, only ferrous sulphate at 250 p.p.m. gave increased yields (464 g/kg dry straw compared with 394 g/kg for the control).
