Additional Information: The present study aims at the preparation of antioxidant enriched mixed fruit jam by incorporation of catechin rich conserve from the pruned or coarse tea leaves and optimization of processing conditions to obtain antioxidant enriched mixed fruit jam. Here, waste from tea plantations (unused tea leaves) was utilized to prepare the catechin rich conserve, and is used for preparation of mixed fruit jam. The jam is evaluated for total polyphenols content, radical scavenging activities, antioxidant activities and sensory analysis. The polyphenols content, radical scavenging activity and antioxidant activity of these conserves are evaluated by using Folin-Ciocalteu method, the DPPH model system and β-carotene-linoleic acid assay respectively. Sensory analysis was carried out using free choice profiling, Quantitative Descriptive Analysis (QDA) and Hedonic scale.
