Additional Information: Oil seed have been used as a source of edible and non edible oils. Apart from the oil which is obtained for them,these oil seeds have a great potential to be used as a source of nutraceuticals that are beneficial to health. Most of the work that has been done by scientists is on the oil and its nutraceutical content and its properties. But oilseed byproduct that are left after the deoiling process could also serve as a good source of nutraceuticals, which mainly included the lignans, phenolic compounds, polyphenolic compounds, tocopherols and tocotrienols. The objective of the present work is to use oilseed cake as a source for preparation of nutraceuticals concentrates, which is further incorporated into various foods using nutraceutical carriers like microcapsules and emulsions. The desired goal is achieved by using five oilseed cakes namely Sesame, Niger, linseed, Yellow mustard, Black mustard. The Oilseed cake is first defatted with Petroleum Ether using soxhlet apparatus by refluxing in seven to cycles. Then the defatted cake is dried and nutraceuticals were extracted by using polar solvent such as methanol. In the second phase of the work, the various nutraceutical content of the nutraceutical concentrate viz. Tocopherol, beta carotene, Sesamol and Polyphenol content is estimated by using standard prescribed methods. In the third phase of the work, the nutraceutical concentrate obtained is encorporated into various foods by using suitable Nutraceutical carrier. In the fourth phase of the work efficiency of the carrier, bioactivity of the nutraceuticals after incorporation and storage is estimated.
