Additional Information: | As a natural food colorant, betalains are finding increased importance. Betalains are water-soluble nitrogen containing pigments that consists of two structural groups, the yellow known as Betaxanthin and the other red purple known as Betacyanins. Betaxanthins and Betacyanins are genetically and structurally closely related pigments making their separation a difficult and tedious process. Presently, the separation of these two pigments is achieved using paper chromatography, Thin Layer Chromatography and HPLC. All these methods are more analytical than preparatory. By employing aqueous two-phase extraction comprising PEG6000/Ammonium sulphate system, differential partitioning of Betalains and sugars were efficiently carried out and in subsequent extractions differential partitioning of betacyanin and betaxanthin to top and bottom phases, respectively was also carried out. This method can be scaled up. |
