Additional Information: The study i,e phytase from LAB was undertaken to select potent phytate degrading LAB and to evaluate their additional characteristic features. Six LAB strains were selected and screened for their ability to degrade phytic acid using calcium salt of phytic acid (calcium phytate) as substrate. All 6 strains were able to degrade calcium phytaye. These strains showed phytase activity and poor acid phosphatase activity. These strains were further evaluated for additional characterstic features. The resistance pattern to several antibiotics and MIC was also analysed, and also analysed for viability of LAB in the synthetic stomach juice. The study of proteinase activity was checked in 2 LAB strains. These proteinase enzyme was found to be cell wall bound. So initially cell wall extracts were prepared and using this cell wall extracts LAB were checked for proteinase activity and analysed by Lowry’s method.
