Abstract

The main aims of any dairy industry should be assurance of quality products and the supply of adequately safe and healthy dairy products. This can be attained by adopting a systematic and organizational structure and implementing food safety systems such as HACCP and ISO22000:2005. Quality Management Systems (QMS) play a major role in maintaining the safety of the any food item. Implementation of Good Manufacturing Practices (GMP) and Good Hygienic Practices (GHP) can keep the dairy products safe till these are consumed. Implementation of QMS provides confidence that all the factors affecting the quality of the product are under control. QMS is a management driven activity and it demands commitment from the top management. Determining, planning and implementing the standards to ensure that the processes lead to production of safe dairy products is a part of service realization. Conducting internal audits, controlling nonconformity issues, continual improvement with corrective and preventive actions are part of QMS. GMPs comprise procedures, processes, controls and precautions that ensure safe, wholesome food. Good manufacturing practices also facilitate the production of foods of uniform quality. GMP elements can make important contributions to the design of facilities, which facilities easier maintenance. GHPs are concerned with the precautions that need be taken to ensure safe dairy products. With the stringent specifications in place in the new food law proposed by FSSAI and specified regulations on sanitation and hygiene for dairy industry, the talk provides more details of these aspects along with recent recommendations of food safety pertaining to microbiological safety of the dairy products.
