Additional Information: | <p align="justify">Liquid foods have to be processed in order to increase their shelf life, reduce transportation cost and for value addition. Evaporation is the conventional method used for the concentration of liquid foods. This requires high temperature for its operations. This lead to thermal deterioration and loss of flavor, aroma from Fruit juices. Membrane processes have the potential to overcome the drawbacks of conventional process. These membrane processes could achieve maximum concentration and it retains essential volatiles and important flavor components. The limitations of the current membrane processes are that they suffer from concentration polarization and membrane fouling and also maximum attainable concentration is not achieved. OMD is a novel, a thermal membrane process that concentration of aqueous solution under mild operating conditions. This process is ideally suited for concentration of beverages and liquid foods. Its primary advantage lies in its ability to concentrate solution to high level at ambient temperature and pressure with minimum thermal or mechanical damage to or loss of solutes. Clarified pineapple fruit juice of concentration 9° brix was taken as feed and Sodium chloride as strip solution and maximum concentration achieved was 29° brix.</p> |
