Additional Information: The present project was focused on developing nutritious, ready-to-eat food products. Three products, including a health beverage, ‘Milkadd’; a sweet snack product, ‘Nutrasweetos’ and a savory snack, ‘Nutrasnackos’ were formulated.‘Milkadd’ is a supplementary food product, which can be used as an add-on to milk providing the nutritional benefits of mango, carrot, sesame seeds, ragi, jowar, jaggery and skim milk powder. It gives a delightful and nutritious beverage when added to hot milk. It has a mild fruity aroma with an appealing cardamom and toasted cereal flavor. It is a delicious way to provide nutrients to children, elderly, pregnant and lactating women or anyone wanting a quick energy boost along with vitamins and minerals, especially β-carotene (37 % RDA), phosphorus (27 % RDA) and calcium (27 % RDA). The product provides 192 Kcal energy, 3.4 g protein and 35 g of carbohydrates per 100 g. The sensory evaluation of the product revealed that it had a prominent toasted cereal and cardamom flavor and was well rated for its overall quality. ‘Nutrasweetos’ is a non-fried fruit-vegetable and cereal based, sweet snack product. It can serve as low-calorie tea-time snack with a delightful cardamom and toasted cereal flavor which provides good amounts of beta carotene (24.2% RDA), calcium (46% RDA) and phosphorus (40 % RDA). It provides 238 Kcal energy, 12 g protein and 42 g carbohydrates per 100 g product The product had a desirable fruity, cardamom and toasted cereal aromas with balanced textural attributes as observed during sensory analysis. ‘Nutrasnackos’ is a vegetable, cereal and pulse based, ready-to-eat crunchy snack providing a healthy alternative to the conventional snacks available over the shelf. It is low fat savory finger food with a delicate blend of coriander, mint and cumin, which is a tasty way to provide phosphorus (42% RDA), calcium (35% RDA) and beta-carotene (42% RDA) tochildren or serves as low calorie filler for the calorie conscious. It provides 212 Kcal, 12 g protein and 35 g of carbohydrates per 100 g. It has an appealing milieu of mint, coriander and cumin flavor with a crispy texture.
