Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information: A growing amount of research over the last past decade has been directed towards the development of devices able to mimic the human ability to sense. Of the five senses, much important has been given to know the working of human olfactory apparatus, or in short the human nose. The human nose has been the best judge for food and perfume etc. for years. The ability to smell has been utilized to distinguish the quality of a sample whether it may be food, beverage or a perfume. But, how long can a human nose smell the same way as it would do for the first time, especially in cases where a large number of samples have to be distinguished and identified?. That’s where its efficiency comes into question and that’s where the technology takes over. In this project i.e. development of electronic nose for food analysis, the electronic nose and its instrumentation system has been developed as a mimic of human nose (as we bring out the differences) to perform the job of assignment of quality of food, beverages etc. Electronic noses or e-noses automatically detect and recognize odours, vapours and gases. An electronic nose consists of a sensing system (e.g.: an array of chemical sensors)and an automatic pattern recognition engine. The sensing system produces an array of measurements for each sample and gives it to the pattern recognition engine which then distinguishes the constituent elements based on its data base of signatures.
