| Additional Information: | In the present investigation, the principle of spray evaporation was tested with apple juice in a spray drier by spraying juice in to a co-current air stream at ambient conditions. Without application of heat, the concentration of apple juice could be increased from 10 to 14°Brix. Encouraged with the results, spray evaporation was further investigated under a wide range of operating conditions that could be manipulated for experimentation in the apparatus with two major representative liquid products, milk and fruit juice (apple). |
