Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information: α-Tocopheryl glycosides open up new possibilities of combating the α-tocopherol deficiency prevailing in many parts of the developing and some parts of the developed regions of the world. Thus, these glycosides show more stability with better bioavailability as vitamin supplements, than the parent compound α-tocopherol. Enzymatic synthesis of glycosides presents a better option to chemical synthesis. Currently chemical preparation of glycosides has not met EC food regulations, and therefore chemical preparation of glycosides is not applicable in food industry. Thus, enzyme-catalyzed reactions make an excellent alternative. In such a scenario, the present study, attempts to synthesize glycosides of α-tocopherol by an enzymatic method including β-glucosidase from sweet almond, provides an insight into developing newer and more efficient processes.
