Abstract

Arabinoxylan (AX) is the main non-starch polysaccharide in cereals and millets bran, an agro�processing by-product. Structurally arabinoxylan is commonly made up of β1-4 linked xylose backbone substitute with arabinose (α1-2/1-3), which is further bound with 1-3% phenolic acid. AX is known for several bioactivities, including prebiotic, antioxidant, immunomodulatory, anticancer, anti-diabetic, etc. Currently, wheat, maize, rice, ragi, and sorghum have been explored for AX and AXOS (degradation product of AX) and their structure-function relation. Despite being the third most widely cultivated food crop in India after rice and wheat, pearl millet bran is not explored in detail as a source of AX and AXOS. Hence, the current study was undertaken to utilize pearl millet bran to isolate AX and AXOS and explore their bioactivities.
