Abstract

Production of lactic acid by a Lactobacillus plantarum isolate was standardized on a variety of fermentation substrates including enzyme-hydrolysed (alpha-amylase and amyloglucosidase) tapioca (Manihot esculenta) flour, tapioca starch and soluble starch. Yields of lactic acid (g/100 g reducing sugars used) in nutrient media containing hydrolysates (10% reducing sugars) were 21.8, 16.2 and 16.2% for tapioca flour, tapioca starch and soluble starch, resp. Higher yields (29-34%) were obtained in media containing 5% reducing sugars. Conversion efficiency was 80-99% when acid produced in the media was periodically neutralized. 100 ml of medium (5% sugars) yielded 4.0-4.5 g of calcium lactate. It is suggested that the data favour the use of unrefined starchy materials for lactic acid production (the same substrates can be utilized for biomass production).
