Abstract

Carcass traits, non-carcass components and some quality characteristics of meat from Bannur ram lambs reared to 10-11 months of age on (i) range feeding or (ii) a fattening regime were compared. (ii) lambs attained 22.7 kg live wt. vs. 14.5 kg for (i) lambs. Results indicate high growth potential for Bannur animals fed under confinement, as evidenced by the much higher dressing yield, meat yield and meat/bone ratio, and the much lower yield of less valuable parts (skin, head, blood, etc.) as a proportion of live wt. in (ii) than (i). Increased intramuscular fat content due to fattening of lambs did not affect the water holding capacity, cooking loss and thermal shortening of muscles. The markedly lower shear force values for muscles from (ii) lambs indicate that (ii) lambs produced tenderer muscles than those of (i) lambs.
