Additional Information: | <p align="justify">There are many snack foods traditional to Indian culinary. In south India, a fried snack food made out of rice and black gram flour called murukku is particularly famous.This product is traditionally made using a hand operated press and the extruded product is shaped into a circular form with 4 or 5 coils, deep fried in oil consumed.One variant in this murukku is a hand made one which consists of a twisted strand formed into a circular shape consisting of 4 or 5 coils. Preparation of this murukku,traditionally practiced in some parts of Kerala, requires a lot of skill and dexterity. The skill is passed on from one generation to the next. A skilled worker is able to prepare about 70-80 murukkus per hour as compared to about 30-40 by a novice. These murukkus are being sold in the local market and also in some places outside the state and country as well. Since the skill is dying down and workers are finding better opportunities by working in cities, Kerala Government has recognized the need to give fillip to this industry and promote the same.As a part of this activity, CFTRI has been requested by Kerala Government to suggest machinery for hygienic preparation of this product and for setting up of a cluster near Palakkad district, Kerala. During the first phase of the project, the machinery required for grinding and dough preparation, frying and packing, whereas the preparation of murukku would still be done by the skilled workers. The numbers of coils in a murukku being constant i.e. about 5, the numbers of twists per inch length of the murukku varies with the worker preparing it. So there is non-uniformity in the product. In order to increase the productivity of uniformly twisted murukkus and to reduce the drudgery and also to enable unskilled workers to prepare these twisted murukkus, the problem of design and fabrication of a gadget for preparation of this product was suggested to us. It is proposed to design and fabricate a gadget which would be either hand or leg operated to produce about 200-250 murukkus per hour.</p> |
