Abstract

Malt extract is used in many ways. In plain form it can be used by invalids and infants. It can be blended with shark liver oil to produce 'ieveral products rich in vitamins A and D. Mineral salts of iron and manganese, phosphates, iodine, etc. can be incorporated in malt extract to prepare tonic foods. There is also a considerable demand for malt extract in the manufacture of confectionery. Further, malt forms an important constituent of malted milk.
