Abstract

Extraction of fresh large cardamom pod husk with methanolic HC1 yielded a mixture of two (deep pinkish red) pigments. The pigments, present in the ratio of 1:2 were separated by paper chromatography, characterized as cyanidin 3-glucoside and cyanidin 3.5-diglucoside by chemical and spectroscopic analysis and confirmed by comparison with authentic samples.
