Abstract

The carbohydrates of brown mustard were fractioned and estimated. Compared to rapeseed and turnip rape, mustard seed contains significantly larger amounts of hemicelluloses, but lesser amount of pectic substances, hot water soluble polysaccharides and celluloses. The 80% aqueous ethanol soluble free sugars were separated and estimated by paper chromatography. Among free sugars, sucrose was considerably less, and raffinose, glucose and fructose were more in mustard, than in rapeseed and turnip rape.
