Additional Information: Coffee is one of the most popular beverage consumed world over. Besides improving its quality as beverage, recently interest has been focused on the antioxidant activity of the green coffee beans. This interest is not restricted to the antioxidant usage in food systems, but also relates to the function that protects cells from oxidative damage in the biological system. The antioxidant activity of coffee beans depends on the presence of natural constituents such as phenolic compounds, as well as reacted compounds formed during roasting. The present work was focused on assessing the antioxidant activity of the green coffee, which are defective, or low quality beans. Coffee conserve prepared after defatting of the triage green coffee beans was found to be an excellent antioxidant when analysed after incorporation in food system that was sunflower oil. It proved quite effective in restricting oxidative changes which progress during storage of refined vegetable oil. It was soluble to a great extent and did not have any adverse effect on the sensory quality of the oil. Results indicate that coffee can be safely added to the list of potential natural antioxidants that can find its application in other food systems also specially foods rich in fat.
