Abstract

The PER of a pOOl: wheat diet (fWD) increased to a highly significant extent from 2.28 to 2.82 by supplementation with lysine. Addition of threonine or methionine along with lysine did not bring about any further increase in PER while addition of a mixture of the above three essential amino acids resulted in a further significant increase in PER to 3.21. The results are of great importance to developing countries as they have shown that the protein quality of poor wheat diets could be effectively improved by fortification with lysine.
