Abstract
Starch, the major food reserve polysaccharide of plants, is a widely studied biomolecule of great diversity and utility. Occurring in the form of tiny and discrete granules of varying shape, size, physicochemical and digestibility characteristics, starch possesses tremendous industrial potential. The granule characteristics, morphological features and non-carbohydrate constituents of starch as well as the future lines of work are presented in this review article.
