Abstract

Growth responses of. weanling rats on diets containing lucerne (M. sativa) leaf protein, prepared under different conditions, were studied. No differences in the quality of leaf protein were observed, when it was dried .under diverse conditions, viz. dried at 4O-60~ or at IOO'C'in a fast current of air, or at 50' under vacuum or roller dried or spray dried or freeze dried. Nor were any changes in quality observed as a consequence of solvent extraction or autoclavine. Leaf protein precipitated at pH 4-4-5 was found to be nutritionally inferior to that coagulated by heat without any adjustment of pH. A heat treatment of the acid precipitated leaf protein led to some improvement in quality, while heating the acidified extracts and then separating the leaf protein, to deterioration.
