Abstract

This review on deacidification of edible oils covers: the need for deacidification; conventional deacidification methods (chemical, physical and miscella processes); new approaches to deacidification of vegetable oils (microbial removal of free fatty acids, enzymic deacidification/re-esterification, chemical re-esterification, solvent extraction, supercritical fluid extraction, membrane technology); and applications of deacidification techniques.
