Abstract

A numerical model and a multivariate optimization technique were used to determine values of the surface heat transfer coeff. for heating and cooling media, thermal diffusivity of the plastic wall of cans used for thermal sterilization of foods, and the contact conductance between the plastics wall and the food. Model-estimated and experimentally determined temp. profiles at several locations inside the plastics cans filled with a conduction-heated food simulant were used. Nutrient retention, sterilizing values and processing times for foods processed in cylindrical plastics cans were determined using the estimated thermophysical property values. Influence of the thermophysical properties on temp. response and nutrient retention in the food was also studied.
