Additional Information: | <p align="justify">Decaffeination is the process of removing caffeine from coffee beans and other beverages. The demand for decaffeinated coffee is increasing now as it nullifies the negative physiological effect of caffeine at the same time retains the aroma and taste. Chemical decaffeinating processes have their own disadvantages and consumption of the chemically decaffeinated coffee has some ill effects on human health. Therefore, a better alternative is biodecaffeination. Microbial decaffeination especially with GRAS status microbes is beneficial in terms of both process economy and achieving the goal of decaffeination. One of the thrust areas in Fermentation technology is the utilization of microbes for the production of value added products. In this respect in the present study the isolation and identification of the enzymes responsible for caffeine degradation was done. The main enzymes include Caffeine demethylase, Xanthine oxidase and Xanthine dehydrogenase. Also studies were conducted in the present report on the immobilisation of the isolate to degrade caffeine and it was found that the isolate could degrade caffeine in 48 hours of incubation. This shows a promising use of the organism for the development of a biodecaffeination process by a packed bed reactor of the immobilized organism.</p> |
